Black diamond

black diamond’, once very common and widely enjoyed, is now a rare delicacy served only in the best restaurants

Harvested in the Tricastin, the Val de Drôme or the Coteaux de Romans, the black truffle of the Drôme, the Mélanosporum, is noteworthy for its strong and wild aroma; this is the black diamond. A precious ingredient, it transforms all food recipes.
The Tricastin, 1st truffle growing area in France, covers 68 communes in the Drôme and 15 communes in the Papal Enclave. The Tricastin black truffle, the Mélanosporum, represents 60% of national production. This prestigious « black diamond », formerly much eaten, has today become rare and and enjoys the status of a refined delicacy to be found at the best tables or tasted at source on the truffle farm. Its very specific characteristics have rendered it a unique and mysterious product: an underground existence, a black unevenly spread colour, a woody aroma and a powerful taste.
This fungus seems to have found, in the Drôme, the right conditions to come to life and grow naturally, requiring: a tree, preferably an oak tree, called the ‘truffle oak’, a sufficiently calcareous soil and, finally, a Mediterranean type climate.

The harvest or « cavage » of the black truffle takes place over the winter. The harvest is carried out using a specially trained truffle dog. The dog indicates the presence of truffles by scratching the soil. With a ‘fouji’ (a hook-shaped tool) the truffle grower lifts the truffle.
Please note : Saint-Paul-Trois-Châteaux has obtained the ‘Site remarquable du goût’ distinction for the ‘Truffières du Tricastin’ (truffle grounds).  

Moelleuse et croquante, tuber melanosporum est connue par son parfum envoûtant de sous-bois humides et ses qualités gustatives.
La France est le premier pays producteur de truffe noire. Elle est récoltée dans le sud-est de la France à 80%, 20% dans le sud-ouest, et quelque peu dans le centre-ouest.

DAY 1

Arrival in Avignon

We welcome you at Avignon TGV at 2 pm and drive you at your ideally located hotel in the heart of the charming old town of Avignon.

From medieval houses and alleys to Renaissance mansions, through all its beautiful and old squares, city of the popes, city of art and culture, the Capital of Provence, is a small town that has all the characteristics of a big one, a town full of history and life.

DAY 2

Avignon & Pont du Gard

This morning you will explore the historical center of Avignon, the Popes’ Palace and the Saint Benezet Bridge, listed as World Heritage Sites by Unesco. 

In the afternoon we drive you to another Unesco Site, a wonder of antiquity, the magnificent Pont du Gard, built in the 1st century in a superb setting, with a height of more than 40 m on three floors of arcades set back from each other.

DAY 3

Sensory Discovery & visit of cellars in Chateauneuf du pape with wine expert

This morning you’ll be driven to Suze-la-Rousse and its beautiful castle that hosts a Wine University. With a wine expert, enjoy a day in which sensory discovery and the pleasure of wine are
combined: resumption of the tasting method, search for landmarks and nuances, assessment of
wine quality, tasting session explaining the constitution of the wine and its potential for evolution (Rhone Valley range).
 
After lunch you will head off to Chateauneuf du Pape and visit the famous village. The popes of Avignon contributed to the development of the Chateauneuf vineyards, From the papal fortress, superb view over the Rhone valley, Avignon with the Popes Palace standing out against the backdrop of the Alpilles; you can also admire the Luberon, the Ventoux and the dentelles de Montmirail. 
You visit the vineyard and cellars of Château de Beaucastel where one of the winegrowers will
share his authentic know-how, commented tasting, visualisation of the terroir, the management of
the vine, the vinification and maturation that characterise the spirit of the wine.

DAY 4

Truffle patch & Olive oil tasting

Today you will attend and participate in a special activity with a farmer and his animal: truffle hunting!

The excavation of the truffle is very difficult because no mechanical means (or not as effective as animals) can detect it, and nothing, or almost nothing, reveals its presence to the eye. The man therefore called upon dogs, among others, for their sense of smell. Dogs only select truffles that have reached physiological maturity without touching the others. Amazing! It is quite symbolic that the dog’s nose has disturbing similarities with truffles. These two truffles were intended to meet each other.

The dog explores the ground in front of the wind, face down. Suddenly it smells like a ripe and fragrant truffle. He did not dig it up, but marked the blessed place with a paw. It is his master who digs up the black diamond with a small pickaxe handled with great care, the “picolon”. Satisfied, the dog awaits a reward (a treat chosen by the master).
And the research continues, full of ardour and connivance.

You will also discover another local product: the Nyons olive  (AOC-AOP), of the Tanche variety is the only olive to benefit from ‘origine contrôlée’ status. The olive is harvested ripe and hence black between November and January. The largest calibre black olives are destined to be eaten whilst the smallest are used in oil production.
Nyons olive oil (AOC – AOP), the first in France to achieve AOC status, is a ‘pure fruit juice’ which is a guarantee of its quality.

Discovering great wines with a wine expert

Today you will discover the qualities of great wines with a wine expert. Explanation of the factors that predispose a wine to become “of great renown”. Tasting over part of the morning and then during the lunch. A session for tasting enthusiasts.

DAY 6

Richerenches Truffle Market with a chef & truffle meals

You’ll head off to Richerenches this Saturday morning. You will explore the most highly regarded truffle market in Europe with the Chef of Chateau de Rochegude’s restaurant (only saturday morning) and you will be taught all the subtleties about choosing truffles
 
You’ll then be back to the hotel for lunch as the Chef will cook an omelette with truffles bought earlier on Richerenches market.
 
After lunch why not visiting the famous Grignan village & Castle in the heart of the Provençal Drôme ? Overlooking the plains and mountains, Chateau de Grignan is built on a rocky promontory. Witness of Renaissance architecture and French classicism, the building owes its reputation to the Marquise de Sévigné. It’s also possibile to ride e-bikes from Rochegude to Grignan (25 km).
 
Tonight subtile truffle dishes will also be on the menu for your last evening. Bon appétit !
